Watermelon Salsa

Ingredients
- Local watermelon, small dice - 2.5 qts
- Green onions, thinly sliced - 1 cup
- Red onion, finely chopped - 1 cup
- Unseasoned rice vinegar - 1/4 cup
- Fresh cilantro, chopped - 1/4 cup
- Ground cumin - 1 tsp
Preparation
- Combine all ingredients in a container and gently mix until evenly distributed.
- Serve ¼ cup potions using a #16 scoop.
Critical Control Point: Hold for service at 41°F or lower.
