Watermelon Salsa

Ingredients

  • Local watermelon, small dice - 2.5 qts
  • Green onions, thinly sliced - 1 cup
  • Red onion, finely chopped - 1 cup
  • Unseasoned rice vinegar - 1/4 cup
  • Fresh cilantro, chopped - 1/4 cup
  • Ground cumin - 1 tsp

Preparation

  1. Combine all ingredients in a container and gently mix until evenly distributed.
  2. Serve ¼ cup potions using a #16 scoop.

Critical Control Point:  Hold for service at 41°F or lower.
